At our house, lunch is our big meal in the middle of the day, and dinner (at night) is lighter. We're pretty busy during the day and always looking for ways to do stuff more efficiently. We use our Crock Pot an awful lot, several times a week at least! It's a huge time saver!
Today I'll share our 3 favorite short cut chicken crock pot meals and you'll want to be sure to enter the giveaway at the end of the post too!
Our 3 Favorite Crock Pot Chicken Meals
1. Crock Pot Chicken & Gravy
Chicken is our staple meat here as it's less expensive and more available than good beef. One of our favorite shortcuts is from the leftovers of a grilled chicken meal. We save out all the bones and add them to the pot with
- a couple of bouillon cubes,
- half an onion,
- a clove of garlic
- and enough water to cover it all
and turn it on. When it's done, we strain out the bones, and use the broth as the basis for a gravy (adding milk and cornstarch to thicken and a bit of salt and pepper as needed). Served over rice, this is a great second meal!
2. Instant Pot Italian Chicken
Another shortcut we do is to put chicken pieces in the pot with water and Italian salad dressing during our mid morning break. By lunchtime this is ready and fabulous over rice or pasta. And it only took 5 min to prepare the meat!
Instant pot is more like an electric pressure cooker. Typically an electric pressure cooker makes a dish under an hour, whereas the minimal cooking time for a slow cooker is 4 hours.
3. Slow Cooker Chicken Soup
This is another dump and go recipe. We add
- cooked chicken pieces (usually leftover from a meal)
- canned yellow corn
- a can of salsa
- 2 cans of chicken broth or cream of chicken soup (or make your own like we did in #1 and add a bit of milk)
- bouillon, salt & pepper to taste
Serve with shredded cheddar cheese and corn chips.
