Another year has passed. Another year full of treasured memories in the country we have learned to love, and call home. Mexico celebrate's her independence from Spain tomorrow, and we celebrate right along with her.

Pollo Adobado – a family favorite! We eat this about every 2 weeks!
Pan de Cazón – a local speciality (cazón is a small shark). Our neighbor makes it best!
Fresh Fried Fish – so much fun for a cook out! Fresh from the local waters and so yummy! Flower and Sir love to eat the crispy tails!
Cochinita Pibil (shredded pork tacos) – a favorite here for parties.

My favorite things about Mexico–having never been there–are its people. Top of the list is our beautiful, godly daughter-in-law Roxana. With her, her mother, brothers, good friends and co-workers Juan and Maria Esther, Alberto, and many more, including Pastor Suni. There’s something special about happy, smiling Mexican people.
