Another year has passed. Another year full of treasured memories in the country we have learned to love, and call home. Mexico celebrate’s her independence from Spain tomorrow, and we celebrate right along with her.
Here is a glimpse of some of the regional Mexican recipes we most enjoy. Some of them are in Spanish, but you can get the recipe easy enough by watching, and you get to the added bonus of training your Spanish ear!

Pollo Adobado – a family favorite! We eat this about every 2 weeks!
Pan de Cazón – a local speciality (cazón is a small shark). Our neighbor makes it best!
Fresh Fried Fish – so much fun for a cook out! Fresh from the local waters and so yummy! Flower and Sir love to eat the crispy tails!
Cochinita Pibil (shredded pork tacos) – a favorite here for parties.
